Holland America Line's Culinary Arts Centers to Feature Local Culinary Instructor and Author

Seattle, Feb. 4, 2008 -- Paulette Mitchell, culinary instructor and author from St. Paul, Minn., is scheduled to sail as part of the guest-enrichment program on upcoming Holland America Line voyages. During her cruises, the epicurean expert will perform cooking demonstrations for guests in the ship's state-of-the-art show kitchen, conduct culinary seminars, tastings and participate in question and answer sessions.

Mitchell is scheduled to appear on the March 8 segment aboard ms Amsterdam's World Cruise and on ms Zuiderdam's Oct. 23 Transatlantic crossing.

Mitchell, the author of 12 cookbooks, is known internationally for her quick-to-prepare healthful recipes with a gourmet flair. In addition to being a culinary instructor, she also shares her recipes and cooking tips on television shows and media tours, and she regularly offers programs at health spas.

Her book "The Spirited Vegetarian" -- the first vegetarian cookbook incorporating wine or spirits in every recipe -- was awarded "Best Book in the World on Cooking with Wine" at the 2005 Gourmand World Media Awards. Her 15-minute gourmet cookbook series, including chicken, vegetarian and noodles, was honored as "Best Cookbook Series" at the 2000 World Cookbook Fair in Perigueux, France, in 2000, and her "Complete Soy Cookbook" was named best health cookbook at the same event in 1998.

Mitchell entertains and educates her students by sharing culinary tips and kitchen wisdom acquired over the years and through her international travels, which she says is her greatest source of inspiration.

Holland America Line launched its innovative culinary guest-enrichment program in 2005 with the installation of Culinary Arts Centers aboard each of its 13 premium cruise ships. A first-class "show kitchen at sea," the Culinary Arts Centers presented by Food and Wine magazine resemble the elaborate show kitchens used by celebrity chefs on television cooking programs and offer culinary demonstrations, tastings and hands-on cooking classes aboard every Holland America sailing.

Each facility features a theater-style venue, with two large plasma video screens and a large cooking display counter where guests can learn from the masters. In partnership with Food and Wine magazine, Holland America Line has scheduled over 70 celebrated chefs and wine experts to sail in 2008. Classes and demonstrations in the show kitchen are scheduled on every cruise with Holland America's own expert chefs who entertain and educate guests in lieu of a guest chef.

In the summer of 2007, Holland America Line launched a youth Culinary Arts Center activity program to teach kids and teens how to cook. The program incorporates dishes from breakfast, lunch, dinner and snacks in complimentary 45-minute-long classes. Kids under eight years old will learn to make theme cookies, fruit roll-ups, ice cream sandwiches, salad people art and scones. Kids eight and over will make soft pretzels, granola bars, pita chips and hummus, and saltwater taffy. Teens also can attend adult culinary demonstrations.

In addition to the enrichment experience provided by the culinary stars on board, passengers can dine in a variety of venues, including everything from a quick bite poolside to a formal five-course affair.
