Holland America Line Goes Wild For Alaskan Salmon

Cruise Guests Experience Destination through Cuisine, Too

Seattle, April 20, 2005 – Holland America Line will launch a new Alaskan culinary experience on its seven Alaska-bound ships during the 2005 season. Holland America Line’s Master Chef Rudi Sodamin has developed an industry first with “Going Wild for Salmon,” which will feature an extensive menu rotation of Alaskan salmon dishes during each cruise. The “Going Wild for Salmon” program will also include special on-board culinary events, cooking demonstrations, and seminars.


“I recently spent some time in Anchorage and I realized that when our guests disembark in Alaska’s ports, they are met with fabulous salmon preparations of all kinds,” said Master Chef Rudi Sodamin. “Bingo! I thought. We must bring more of Alaska’s delicious, fresh favorite fish to our guests so they can experience their Great Land adventure through cuisine, too.

“Every night they will get a whole new range of tasty salmon choices from the cruise line that offers more Alaskan salmon dishes than any other cruise line,” Sodamin adds.

Sodamin and the Holland America Line culinary team developed 50 distinctive recipes to showcase on dinner menus, which already offer poached, sautéed or baked salmon as an alternative to featured menu choices. The “Going Wild For Salmon” menu additions will be available five nights a week in the Main Dining Rooms, Lido Restaurants, and Pinnacle Grills on all Alaska cruise ships.

“We are delighted to introduce our guests to the world’s most intriguing destinations through cuisine with this tailor-made culinary program,” said Rick Meadows, CTC, senior vice president, marketing and sale. “Our culinary team is always looking for ways to deepen the experience for our guests and to provide the authentic flavors of the regions we visit. Our guests can experience Alaska with their eyes, their ears, and their palate.”

“Going Wild for Salmon” dishes will include both appetizers and entrees, such as Thin Salmon Scallops with Fresh Herb Dressing, Hazelnut-crusted Salmon with Sorrel Sauce, Salmon & Lobster Chowder, Salmon Baked in Phyllo with Shitake Mushrooms & Champagne Sauce, and Sesame Crusted Teriyaki Salmon with Braised Bok Choy & Sake Rice.
